History and Uses:
Curry is a traditional herbal blend, typically a combination of several ground spices. Though the exact ingredients vary widely from region to region, this Curry blend is a proprietary mix of Allspice, Cinnamon, Cloves, Coriander, Cumin Seed, Fenugreek Seed, Ginger Root, Mustard Seed, Nutmeg, Turmeric/Curcumin and Capsicum/Cayenne (red pepper). Curry powder typically has a rich, earthy and pungent flavor with many citrus-like overtones. The word, Curry, is said to be derived from the Tamil word, kari, which is the name that they used for their spicy sauce. Curries can be found in various Asian countries, including India, Sri Lanka (Ceylon), Myanmar (Burma), Thailand, Malaysia and Indonesia. Curry differs greatly, depending on its region of origin, in both taste and content. And, of course, each chef adds his own individual style and touch to each meal. Contrary to some beliefs, Curry is not always hot. In fact, there are some mild Curry recipes designed to balance the blend of the various herbs and spices, some of which have a distinctly delicate and highly sophisticated taste.
